An interview with Executive Chef Wayne Turner

With the arrival of summer, West Lodge Park Hotel is delighted to have launched its new summer menu earlier this month, showcasing a collection of seasonal dishes created by our talented Executive Chef, Wayne Turner.

To give you a glimpse into the inspiration behind our new menus, we sat down with Wayne to discuss his creative process and the standout dishes of the season.

Which dishes are the most summery on the menu and why?

“Fish and seafood are at their peak this time of year,” says Chef Wayne. “So, I would say the crab cakes, sole, potted crayfish tails are the most summery dishes on the menu. Each of these dishes highlights fresh, light ingredients that are perfect for the warmer months. I would always finish the meal with something like the summer pudding, an old-school favourite,  that adds a nostalgic touch that resonates well with the season.”

What made you decide to create these dishes? What inspired you?

“The main reason is the season, but also it’s about what we, as a team, love to eat,” Wayne explains. “We gather together to brainstorm menu ideas and then consult with our suppliers to see what fits. It’s a collaborative effort that ensures our menu is both seasonal and exciting.”

Which is your favourite dish on the menu to make and why?

“I would say the potted crayfish tails, the recipe is quite complex, involving several stages before it all comes together. The reward is in the depth of flavour we achieve. It’s a dish that requires patience and precision, but the end result is incredibly satisfying.”

What summer ingredient do people often forget about that you advise people cook more with in summer?

“I would say from our menu, the most forgotten ingredient is runner beans, I was reminded of this recently. We have them on our Market menu, served with a sherry vinegar dressing as an accompaniment to a lamb dish. Runner beans are versatile and add a delicious crunch and freshness to summer dishes.”
